Potato and sauerkraut soup

Ingredients:
50g bacon
1pc. Clove of garlic
100g onions
500g floury potatoes
50g butter
150g sauerkraut
600ml beef broth
200g cream
1 tbsp fresh marjoram
Salt, pepper

Process:
Dice bacon. Peel and chop the garlic, onions and potatoes. Heat the butter in a saucepan. Sauté bacon with onions, garlic and half of the sauerkraut. Add potatoes and sauté briefly. Pour in beef broth and cream. Add fresh marjoram and let the soup simmer at medium heat for about 25 minutes. Finely puree soup with a blender, pass through a sieve and season to taste with salt pepper.

Wash marjoram, shake dry and pluck off the leaves. Warm remaining sauerkraut in a saucepan and divide into deep plates. Ladle potato soup over the top.
