Marinated trout fillet with sprouts rösti and lemon chive sauce

Ingredients:
Grilled trout fillet pickled
4 trout fillet deboned
30g salt 15g
Sugar
white pepper
Dill chopped
Juice of 1/2 lemon

Potato Rösti with Sprouts

Ingredients:
600g potato boiled
Various sprouts (legumes, onion)
Salt, pepper
Butter lard

Lemon chive dip

Ingredients:
250 g sour cream
Cut chives
Lemon juice and zest
Salt, pepper
