Oberland Kasmuas

Ingredients:
4 tablespoons clarified butter
4 tablespoons flour
approx. 1 liter water
180 g muas flour
300 g mountain cheese
Salt
Ingredients for 4 people

Process
For Oberländer Kasmuas in a large, deep pan from clarified butter and flour make a roux, pour water while stirring constantly and salt to taste. Stir in the cornmeal, bring to a boil until it bubbles, then reduce the heat considerably and simmer the mixture for about 45 minutes, stop stirring! Cut cheese into oblong pieces (length = half the diameter of the pan, width = the height of the polenta mixture in the pan) and stick into the polenta mixture in a star shape, let the cheese melt for about 10 minutes. Serve the Oberländer Kasmuas.
